Pear Liqueur

Ingredients: 1/2 pound mature ripe firm pears
2 apples — peels only — (like red delicious)
1 clove
1/2 inch cinnamon stick or pinch of cinnamon
pinch nutmeg
2 coriander seeds
1 cup sugar
1 1/2 cups vodka or brandy
Instructions: 1. Cut the pears in strips — do not pare — and place in jar with all other dry ingredients including sugar and apple peels.

2. Add alcohol to cover.

3. Steep 2 weeks.

4. Shake the jar every two days to mix the ingredients.

5. Strain, filter and bottle. PLEASE NOTE: If you like the liqueur sweeter, add sugar syrup in small quantities (about one ounce to 4 ounces liqueur) to establish a sweetness ration. Then add to the whole bottle accordingly. When it tastes perfect, bottle.
